Does upgrading the RAM myself void the Applecare warranty?

What Applecare? The little box with a red Apple logo. Read terms and conditions

But if it is the guarantee that came with your Mac I think it has a seal that when you broke it .....

no, it does not. If the Ram Fails, Apple is not inclined to replace it for you, but everything else in the system is still under warranty

I do know, the work has to be carried out by an authorised apple technician

no, both the ram and the hard drive are user replaceable parts, and if you break something trying to fix it then apple will replace it.
also, when installng the new ram, push hard, it feels like it will break something but don't worry, it won't.
